Endive leaves filled with mayo-free tuna salad topped with radish, jalapeño and JF Spicy Salt

Busy Mom Tuna…But Make It Fancy

I’m calling this one “Busy Mom Tuna…But Make It Fancy.” This took under 5 minutes to make and will definitely be on the working lunch rotation for me. Serves 1.


INGREDIENTS

1 can tuna, flaked fine (I like Tonnino)
Dijon, to taste
Red onion, diced
Cilantro, coarsely chopped
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste
Endive

Toppings:
Radish, sliced thin on the mandoline and cut into matchsticks
Jalapeño, deseeded and diced
JF Spicy Salt, to taste

PROCESS

Step 1: In a large bowl, combine your flaked tuna with the dijon, red onion, and cilantro. Season with JF Spicy Salt and cracked black pepper.

Step 2: Plate over endive leaves and top with chopped jalapeño and radish. Enjoy!
