‘Try Not to Eat the Entire’ Cacio e Pepe

This pasta is so simple and one of my all-time favorites. It is extremely customizable so make it according to your preferences. Serves 4.

INGREDIENTS

1 box of pasta, cooked according to box (sub grain-free pasta)
2 cups pasta water
2 cups parmesan cheese, finely grated (sub plant-based cheese)
4-5 Tbsp unsalted butter (sub ghee or vegan butter)
1 tsp fresh cracked black pepper
JF Spicy Salt, to taste

PROCESS

  1. Cook your pasta according to the box instructions and reserve 2 cups of the pasta water. This starchy water is a crucial ingredient for this dish.
  2. Place the cooked pasta in a pan and put the stove on low to medium heat. Add the butter, 1 cup of parmesan, fresh cracked black pepper and 1 cup of the pasta water. Start mixing this together really well and the sauce will start forming.
  3. Depending on your preference add another 1 cup of parmesan, 1 Tbsp of butter, and more pasta water. Mix well and season with a little JF Spicy Salt.
  4. Serve this immediately. Top with fresh Italian parsley and crushed red chili pepper flakes.
