THE BEST CHOCOLATE CHIP COOKIES
This is the best recipe for classic chocolate chip cookies. I prefer to use mini chocolate chips here. Yields 36 small cookies.
1 cup salted butter, room temperature (sub ghee or vegan butter)
1 cup white granulated sugar (sub coconut sugar)
1 cup organic light brown sugar, packed (sub brown coconut sugar)
2 tsp madagascar pure vanilla extract
2 large organic eggs
3 cups all-purpose flour (sub almond flour flour)
1 tsp baking soda
½ tsp baking powder
1 tsp sea salt
2 cups mini chocolate chips
Preheat the oven to 375°. Line a baking sheet with parchment paper and set aside. Mix flour, baking soda, salt and baking powder in a bowl and set aside. Cream together the butter, granulated sugar, and brown sugar until combined. Beat in the eggs and vanilla until fluffy. Mix in the dry ingredients until combined. Do not over mix. Add mini chocolate chips and mix well.
Roll 12 small balls and place evenly on the cookie sheet. Bake for approximately 8-10 minutes. Take them out when they are just barely starting to turn brown. Let them sit on the baking pan for 2 minutes before removing to cooling rack.
