Kale salad with onion, feta, and roasted broccoli

Comfy Cozy Kale Salad

I’ve been in the mood for greens lately and this kale salad was the perfect fix. Be sure to chop your kale fine and dress in my JF Simple Mustard Vinaigrette - it makes the dish! Serves 1.

Ingredients:

3 cups kale, finely minced
3 cups roasted broccoli, chopped
½ cup red onion, chopped
½ cup vegan feta, chopped
¼ cup raw sunflower seeds
1 avocado, diced
½-1 lemon, juiced
Handful of fresh dill, chopped
Fresh cracked black pepper, to taste
JF Spicy Salt, to taste
JF Simple Mustard Vinaigrette, to taste

Roasted Broccoli:
3 cups broccoli, cut into florets
Olive oil
JF Spicy Salt

PROCESS:


Roasted Broccoli
Preheat the oven to 375°. On a baking sheet toss your broccoli florets in olive oil and season with JF Spicy Salt. Roast until slightly brown and crisp. Cool completely and then chop for a smaller bite.

In a large bowl begin to build your salad. Using the chopped kale as your base, layer in the roasted broccoli, red onion, vegan feta, sunflower seeds, avocado, and dill. Season with fresh cracked black pepper and JF Spicy Salt, then dress in lemon juice and my JF Simple Mustard Vinaigrette. Toss well and enjoy!
