Ingredients
2lbs grassfed ground beef
½ tsp JF Universal Salt
¾ tsp dry ground mustard
½ tsp fresh cracked black pepper
½ tsp garlic powder
1 organic egg
1 small brown onion, diced fine
2 cups organic unsweetened brown rice cereal, ground (sub grain-free crackers, crushed)
Glaze:
½ organic chili sauce (sub ketchup)
¼ cup brown sugar (sub brown coconut sugar)
1 Tbsp spicy mustard
Process
Preheat the oven to 350º. Combine all ingredients in a bowl, adding crushed rice cereal last. Using your hands, mix well and press into a meatloaf pan shaping the top for the glaze.
In a small bowl combine the chili sauce, coconut brown sugar and mustard. Heat in a small saucepan just until the sugar is melted, then pour over the loaf.
Bake for 60 minutes, then cool. The meat will still slightly cook while it cools down.
This is actually better the next day, so if you have time to make ahead and refrigerate overnight, it's pretty amazing. Serve with mashed potatoes or white rice.
