Green Without Envy Salad

I really wanted a crispy, green salad today because it’s so hot outside. This is what I came up with - so good and perfectly complimented by this simple dressing of olive oil, fresh lemon juice, and JF Spicy Salt. Serves 1.

INGREDIENTS

Salad:

Romaine, chopped
Arugula
Cilantro, coarsely chopped
Dill, torn
Cucumber, chopped
Vegan feta, crumbled (I like Trader Joe’s)
Alfalfa sprouts
Chives, sliced
Avocado, chopped

Dressing:

Olive oil
Lemon juice, to taste
JF Spicy Salt, to taste

PROCESS

Step 1: Whisk together the olive oil, lemon juice, and JF Spicy Salt to create our dressing. Adjust to taste.

Step 2: In a large bowl, using the romaine and arugula as a base, begin to build your salad.

Step 3: Layer in the cilantro, dill, cucumber, vegan feta, alfalfa sprouts, chives, and avocado.

Step 4: Toss in our dressing and enjoy!
