Honey Butter Pork Loin
Slow cooking on the weekends is one of my favorite things to do. It’s so easy and doesn’t require a ton of effort. This pork loin was delicious and can be made dairy-free with a vegan butter alternative. Serves 8.
INGREDIENTS
Pork loin:
Olive oil
3½ lb pork loin
Spice Rub:
2 tsp JF Spicy Salt
2 tsp paprika
2 tsp thyme
1 tsp garlic powder
1 tsp onion powder
¼ tsp aleppo pepper
Fresh cracked black pepper, to taste
Honey Glaze:
1 stick unsalted butter, melted (sub vegan butter)
¾ cup honey
5 garlic cloves, chopped
1½ tsp JF Spicy Salt
Fresh cracked black pepper, to taste
¼ cup apple cider vinegar
PROCESS:
Step 1: Coat the base of your slow cooker with olive oil and preheat it to a high temp on the ‘sear’ feature.
Step 2: Coat your pork loin in olive oil and sprinkle over an even layer of our spice rub. Lay this into the slow cooker and begin to brown all sides; you’re looking for a nice even char.
Step 3: In a small bowl combine your melted butter, honey, garlic, JF Spicy Salt, cracked black pepper, and apple cider vinegar to create our glaze.
Step 4: Set your slow cooker to ‘low’ and pour over the honey glaze. Cover and let this sit for 4-4.5 hours, until tender.
Step 5: Once time has elapsed, shred the entire pork loin with a fork and let it cool in the sauce that's formed at the bottom of your slow cooker. Season to taste.
Step 6: Enjoy this warm over rice, in tacos, with greens, or completely on its own.
