Paleo Mom's Da Bomb Banana Bread
Adapting Mom’s Da Bomb Banana Bread recipe to make it Paleo. Equally as delicious and completely clean! Yields 1 loaf.
INGREDIENTS:
3 ripe bananas, mashed
1⁄2 cup vegan butter, melted
4 eggs
1 tsp vanilla
1⁄2 cup vanilla coconut sugar
13⁄4 cups blanched almond flour
1⁄2 cup tapioca flour
1 tsp baking soda
1⁄2 tsp baking powder
1⁄4 tsp salt
Chocolate chips (I like Hu)
PROCESS:
Preheat oven to 350. In a large bowl combine mashed bananas, melted vegan butter, eggs, and vanilla. Add coconut sugar to the wet ingredients. In a separate bowl, without over-mixing, combine blanched almond flour, tapioca flour, baking soda, baking powder, and salt. Mix wet and dry ingredients together until well combined. Add chocolate chips. Pour batter into a prepared loaf pan and bake for 50-60min.
