Rainbow Slaw
New slaw tonight! Super easy, delicious, and the perfect pair to your choice of protein. Serves 4 as a main side.
INGREDIENTS
¼ head purple cabbage, sliced on the mandoline #1
¼ yellow pepper, diced
¼ red pepper, diced
¼ orange pepper, diced
3 green onions, diced
1 carrot, shredded
½ block vegan feta, crumbled (I like Trader Joe’s)
3 Persian cucumbers, diced
Bunch of cilantro, torn
1 lime, juiced
JF Simple Mustard Vinaigrette, to taste
PROCESS
Step 1: In a large bowl, using the shredded cabbage as a base, begin to build your slaw. Layer in the yellow, red, and orange peppers, green onion, shredded carrot, vegan feta, cucumber, and cilantro.
Step 2: Toss in my JF Simple Mustard Vinaigrette and the juice of one freshly squeezed lime. Enjoy!
