Simple Roasted Beets

Roasted beets in a clean green sauce - perfect to serve with meats, salads or for lunch.

INGREDIENTS


3 large golden beets, brushed, washed, and sliced
2 large red beets, brushed, washed, and sliced
Olive oil (I like Fancy Peasant)


JF Mayo Free Zesty Spicy Green Goddess Dressing

2⁄3 cup plain coconut yogurt
1⁄2 jalapeño, deseeded and roughly chopped
1 lime, juiced
2 green onions, roughly chopped
1⁄2 cup fresh cilantro, roughly chopped
1⁄3 cup olive oil
1⁄2 tsp JF Spicy Salt
1⁄4 tsp fresh cracked black pepper
1 Tbsp honey (optional)

TOPPINGS


JF Mayo Free Zesty Spicy Green Goddess Dressing
Avocado, cut into chunks
Raw pistachios, chopped
Chives, chopped
Olive oil
Orange zest
Vegan feta, crumbled (I like Trader Joe’s)
JF Spicy Salt, to taste

PROCESS


Preheat your oven to 375o. Slice the ends off your beets. Place them on a parchment-lined baking sheet, drizzle with olive oil, season with JF Spicy Salt, and roast for 45 minutes.


Plate over my JF Mayo Free Zesty Spicy Green Goddess Dressing and top with avocado, pistachios, chives, olive oil, orange zest, crumbled vegan feta, and extra JF Spicy Salt.
