Persian cucumbers in vinegar with red chili flakes

Spicy Cucumber Springs

A cute, fun, and delicious bite. Enjoy as a side or on-the-go snack. Serves 2.


1 pack persian cucumbers
2 Tbsp sesame oil
2 tsp coconut aminos
1 garlic clove, minced
2 tsp rice vinegar
1 tsp gochugaru
Crushed red pepper flakes
JF Spicy Salt
2 tsp sesame seeds, ground


Cut the ends off each cucumber. Slice the cucumber into thirds and on each third make about 6-7 horizontal slices three quarters of the way down, never actually making a full cut. Then turn the thirds on an angle and make 6 additional diagonal slices, this forms the “springs.”

In a bowl mix together the sesame oil, coconut aminos, garlic, rice vinegar, gochugaru, crushed red pepper flakes, JF Spicy Salt, and ground sesame seeds. Add the cucumbers and gently combine, making sure the dressing is well incorporated into each slice.

Sprinkle with additional JF Spicy Salt, and enjoy!
