Spicy Pineapple Salsa Yogurt Bowl

New yogurt bowl now added to my rotation! I was out of mango so went for a Spicy Pineapple Salsa Yogurt Bowl…it’s a new favorite for summer working lunches - perfect for the super hot days that are ahead. Serves 1.

INGREDIENTS

1 cup plain coconut yogurt (I like Culina)
Pineapple, diced
Avocado, diced
Red onion, diced fine
Red pepper, diced fine
Cilantro, chiffonade
Jalapeño, deseeded and sliced thin on the mandoline
A drizzle of olive oil
JF Spicy Salt, to taste

PROCESS

1. Spoon your yogurt into a large bowl. Top with the chopped pineapple, avocado, red onion, red pepper, and jalapeño.

2. Finish with a drizzle of olive oil and my JF Spicy Salt. Enjoy!
