“No Green” Kid Friendly Turkey Sweet Potato Meatballs
Sweet potato turkey meatballs are perfect when trying to sneak more vegetables into your kid's meals. Pro tip: dice the garlic and onion super fine for picky eaters. Serves 2 adults or 4 kids.
INGREDIENTS
½ large sweet potato, diced and boiled
JF Spicy Salt, to taste
Olive oil
less than ¼ white onion, diced fine
½ garlic clove, diced fine
1 egg (sub flax egg)
½ lb ground turkey
⅛ tsp onion powder
⅛ tsp garlic powder
PROCESS
Step 1: Preheat the oven to 375º. In a large pot bring your diced sweet potato to a boil. Once softened, drain, transfer to a bowl, and mash until uniform throughout.
Step 2: Season with JF Spicy Salt to taste.
Step 3: In a pan, warm your olive oil over medium/medium-high heat and begin to saute the onion and garlic.
Step 4: When softened, transfer into our mashed sweet potato and combine throughout.
Step 5: In a separate bowl combine your ground turkey with 1 egg. Season with JF Spicy Salt, onion powder, and garlic powder.
Step 6: Transfer the sweet potato into our ground turkey mixture and form your meatballs.
Step 7: Line them on a prepared sheet tray, coat in extra olive oil spray, and bake for about 15 minutes, then turn the oven to broil until the tops are crisp and slightly browned.
Step 8: Coat them in your kids favorite tomato sauce and cheese or serve plain.
