Shrimp wrap open on a tortilla with avocado, cilantro, red onion

THE BUSY LIFE WRAP

A simple and satisfying meal that fits perfectly into my busy lifestyle. Top to your liking and make it your own. 20 shrimp yields 2 wraps with leftover snacks for the dog and your significant other.

INGREDIENTS

Olive oil
1 garlic clove, minced
1⁄2 shallot, chopped
20 small shrimp
JF Spicy Salt
Fresh cracked black pepper
2 grain-free tortillas (I like Unbun)

TOPPINGS

Cabbage, shredded
Avocado, cut into chunks
Plain coconut yogurt (I like Culina)
Red onion, diced
Cilantro, chopped
JF Spicy Salt, to taste

PROCESS

In a large pan over medium heat, warm the olive oil, garlic, and shallot until soft. Add the shrimp, season with JF Spicy Salt and black pepper. Sauté until shrimp are pink and cooked through.

Serve warm on tortillas and top with shredded cabbage, avocado, red onion, coconut yogurt, cilantro, and JF Spicy Salt.
