Vegan and GF Sheet Tray Lasagne Nachos anyone? Perfect for this snowy WFH NYC day…the best part is the creamy pesto ricotta. Serves 2.


1 box gluten-free lasagne pasta
JF Simple Tomato Sauce (sub store-bought tomato sauce)
Vegan mozzarella, shredded (I like VioLife)
Vegan parmesan, grated
Italian parsley, chiffonade
JF Pesto Ricotta Spread
JF Spicy Salt, to taste

Pesto Ricotta Spread:
Vegan ricotta (I like Kite Hill)
Vegan pesto (I like Gotham Greens)


Pesto Ricotta Spread

In a small bowl, combine equal parts ricotta and pesto. Set aside.

Vegan and GF Sheet Tray Lasagne Nachos

Step 1: Preheat the oven to 375º. Toss your uncooked lasagne sheets in a generous amount of my JF Simple Tomato Sauce, coating evenly.

Step 2: Lay them out on a prepared baking sheet; ladle over extra sauce as needed. Cover with foil and bake for about 30 minutes.

Step 3: Once time has elapsed, pull them out and top with additional sauce; most will have been absorbed by the heat. Bake uncovered for a few additional minutes, then begin to top.

Step 4: Sprinkle over shredded vegan mozzarella and spoon on our Pesto Ricotta Spread. Place back in the oven to melt.

Step 5: Finish with finely grated vegan parm, fresh parsley, and a touch of JF Spicy Salt. Enjoy!
