Crunchy Corn Slaw Salad

New salad up tonight! Super excited about this one - pair with protein of your choice for an easy, delicious meal. Serves 1.


INGREDIENTS

Green cabbage, shredded on the mandoline
Watermelon radish, sliced thin on the mandoline and quartered
Persian cucumber, sliced thin on the mandoline
Red onion, sliced thin on the mandoline
Cherry tomatoes, quartered
Avocado, chopped
Jalapeño, deseeded and diced
Vegan feta, crumbled (I like Trader Joe’s)
Corn, sautéed
Cilantro, chiffonade
JF Spicy Salt, to taste
JF Simple Mustard Vinaigrette, to taste
Sautéed Corn:
Olive oil
Corn
Garlic, minced

PROCESS

Sautéed Corn

Step 1: In a large pan, begin to warm the olive oil and garlic. Add in the corn; heat throughout. Season with JF Spicy Salt.

Step 2: Set aside once cooked to your desired firmness.

Crunchy Corn Slaw Salad

Step 1: In a large bowl, using the shredded cabbage as a base, begin to build your salad. Layer in the watermelon radish, cucumber, red onion, tomatoes, avocado, jalapeño, vegan feta, and sautéed corn.

Step 2: Finish with fresh cilantro, JF Spicy Salt, and dress in my JF Simple Mustard Vinaigrette. Enjoy!
