“Fresh Peas” Is for Pops Salad

This salad is for you Pops….when I was growing up my father would always walk through the door with fresh bags of peas and would eat them whole or would shuck them over the kitchen sink for us. Fond memories I am grateful to have.

Today I added fresh sugar snap peas to a combination of butter lettuce, mini cucumbers, cherry tomatoes, avocado, red onion, raw sunflower seeds, beets, pomegranate seeds, vegan feta, and flaked tuna all tossed in my JF Simple Mustard Vinaigrette and topped with JF Spicy Salt. Serves 1.



INGREDIENTS

Butter lettuce (I like Organic Girl)
Mini cucumbers, sliced
Sugar snap peas, chopped
Avocado, chopped
Cherry tomatoes, quartered
Red onion, chopped
Beets, chopped
Vegan feta, crumbled (I like Trader Joe’s)
Pomegranate seeds
Raw sunflower seeds
Cilantro, coarsely chopped
½ jar Tonnino tuna fillets, flaked with the oil (I like Tonnino’s Tuna Fillets with Lemon & Pepper in Oil)
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste

PROCESS

Step 1: In a large bowl, using the butter lettuce as a base, begin to build your salad. Layer in the sliced mini cucumbers, sugar snap peas, avocado, cherry tomatoes, red onion, beets, vegan feta, pomegranate seeds, raw sunflower seeds, and cilantro.

Step 2: Top with the flaked tuna fillets, dress in my JF Simple Mustard Vinaigrette, and finish with JF Spicy Salt. Enjoy!
