Mayo-Free Lobster Salad
The ultimate summer salad. Go heavy on the cabbage and scoop with grain-free chips for more of a "lobster salsa" vibe. Serves 1.
INGREDIENTS
1 cup cabbage, finely chopped
½ cup lobster meat, finely chopped
2 Tbsp red onion, finely chopped
¼ cup corn, roasted
1 Tbsp jalapeño, deseeded and finely chopped
1 Tbsp cilantro, finely chopped
½ Tbsp Italian parsley, finely chopped
Squeeze of fresh lime, to taste
2 Tbsp JF Simple Mustard Vinaigrette, more to taste
JF Spicy Salt, to taste
PROCESS
Step 1: In a large bowl, combine the chopped napa cabbage, lobster meat, red onion, corn, jalapeño, cilantro, and parsley.
Step 2: Dress in a generous squeeze of fresh lime juice and my JF Simple Mustard Vinaigrette. Finish with JF Spicy Salt.
Step 3: Scoop with grain-free chips or enjoy on its own!
