Colorful salad with cabbage, avocado, cauliflower rice in a bowl

Saturday Simple Slaw

Stocking my parents with clean food before I head back to LA and threw together this totally simple, totally delicious slaw. I'm not listing measurements so that you intuitively add what you want. Serves 4 as a small salad.

INGREDIENTS


1 Tbsp olive oil
1 (16oz) bag fresh cauliflower rice (I like Trader Joe’s)
1⁄2 jalapeño, deseeded and diced
1 garlic clove, minced
9oz bag carrots and cabbage mix, shredded (I like Trader Joe’s)
Handful of red onion, sliced
Handful of radish, sliced
JF Simple Mustard Vinaigrette, to taste
Squeeze of lime juice, more to taste
1 avocado, chopped
Handful of cilantro, coarsely chopped
Handful of raw pumpkin seeds
Handful of chives, chopped
Handful of raisins

PROCESS


In a large pan over medium heat warm the olive oil. As it begins to shimmer, add the cauliflower rice, jalapeño, and garlic, sautéing down until tender.

Don’t rush the cooking process, allow this to brown and become slightly crisp. When done, set aside to cool.


In a large bowl, combine the cabbage and carrot slaw with your radish, red onion, and cooled cauliflower rice.

Dress in my JF Simple Mustard Vinaigrette and toss well. Add a generous squeeze of fresh lime juice, avocado, cilantro, raw pumpkin seeds, chives, and raisins.

Serve at room temperature and enjoy!
